1.5 Art. tablespoons vegetable oil, 1,5 Art. unsaltedbutter, 1 pod of hot greenpepper, 1 tsp cumin 700 g small seedlesszucchini, 1 / 2 tsp turmeric, 1 tbsp. freshly groundCoriander, 1.5 cups of green peas, 3 tbsp. spoonchopped cilantro, parsley or mint, 1 teaspoon salt.
Heat the oil in a 2-3-liter heavy lowsaucepan over medium heat. Add seededand cut into strips along the hot pepper, cumin and cook,until they darken. Mix with diced1,5 cm squash, turmeric, coriander, green peas,half of the greens, and butter. Cover and simmer10 minutes, stirring occasionally. Then open and cook,until the courgettes are soft. Season with salt and remaininggreens, gently stir and serve.
