Seasoning of coriander

1 cup chopped and lightly compacted freshcoriander, 1 tsp cumin, 3 tbsp. tablespoons sesame seeds, 1 / 4cup chopped almonds, 1 pod of green islandpepper, seeded, 1.5 cm ginger root,peeled and finely chopped, 2 tbsp. spoonwater, 1 / 4 cup sour cream or yogurt, 1 tbsp. teaspoon sugarsand, 1 tsp salt.
In a cast-iron skillet with no oil to fry cumin seeds, sesame,Almonds (on low heat, stirring often, until almondsslightly darkened). Add remaining ingredientsand whisk until smooth. Submitto appetizers, deep fried. Keep tightlyclosed and refrigerated no more than two days.
